Whipping egg whites denatures the ovalbumin protein, resulting in strong lipid layers wrapped around air bubbles, allowing sculpture that looks like… a puppy. The first images shows how india ink in skim milk beads up. In the second, half and half was used, and the surface tension was lower, allowing shapes to be drawn. In the third, the surface tension of heavy cream was higher than the ink, and it was pulled apart.
