Both Grand Junction and Carbondale were unstable atmospheres based off of the CAPE readings. I was unsure when I had taken the Boulder timelapse so I don’t have a Skew T diagram but I believe it is Stable. Most of the Grand Junction and Carbondale clouds are Cumulonimbus and Stratocumulus. Boulder has a mix of Stratus and Cumulous in it.
