Depicted here is a two-layered fluid, with a layer of olive oil suspended above water. The blue spheres are droplets of food coloring which, because they are water-based and water is a polar molecule, have coalesced and are not mixing with the oil. Due to surface tension, the droplets are suspended above the layer of water. Seen towards the left of the image is one droplet which has passed the boundary into the water and is therefore mixing with the clear water.
